David Marchessault promoted to executive chef at Quarry Hill
David Marchessault was recently promoted to Executive Chef at Quarry Hill and Regional Executive Chef (Maine and Vermont) of Unidine, Quarry Hill’s dining services provider. Prior to joining the Unidine ranks in September 2023, Marchessault served as Sous Chef for Quarry Hill and as Executive Chef for Knox Center in Rockland.
In his new role, Marchessault is responsible for menu development and food production, often in consideration of dietary restrictions and allergies. He also manages staff scheduling, ordering, and kitchen controls for the entire Quarry Hill dining operation. He looks forward to collaborating with and supporting other chefs in the region as part of his expanded regional duties.
"I have worked with many chefs in my years, but none have the dedication, compassion, and work ethic that David puts forward," said Patty Thornton, director of dining services, in a news release. "He cares about every aspect of the kitchen and is a great partner to have here at Quarry Hill."
Marchessault has enjoyed a diverse culinary career, having cooked in the kitchens of several beloved local restaurants, including The Lobster Pound in Lincolnville Beach, Sea Dog in Camden, and The Waterfront in Camden. He came to Quarry Hill ten years ago and has enjoyed roles of increasing responsibility throughout his tenure.
“Over my time here, I’ve built many relationships with staff and residents," he said. "We are all family here. Communication is key when it comes to delivering on the needs of the residents, and nothing is possible without our wonderful team.”
Marchessault and his wife, Katherine, live in Thomaston. Their grown children, Brady and Alayna, have each been employed in dining service roles at Quarry Hill. In his free time, Marchessault enjoys fishing from all venues and has coached a variety of youth sports in Rockland and Thomaston.
