Chef Shana York from The Lincoln Home Shares Strawberry Rhubarb Crisp Recipe

Shana York started working in the restaurant business when she was 13. At her first dishwashing job, everyone started teaching her how to cook. She worked there for 8 years, then at several Boothbay Harbor restaurants. Shana’s passions are working with seniors and cooking, so she then went on to work in a nursing home for 15 years. In 2014 she joined the culinary team at The Lincoln Home. Shana shares, “I love my "Lincoln Home family,” fellow co-workers and residents bring light to my days. We have fun preparing healthy and creative meals and we know how much our seniors value the creations prepared for them.”
 
Summer Time  Strawberry Rhubarb Crisp
 
Ingredients:
 
8c. rhubarb sliced
1-1/4 c. sugar
1 lb. fresh strawberries
3 T cornstarch 
2 tsp. fresh lemon juice.
For the topping:
2 c. flour
2 c. brown sugar
2 c. quick cooking oats
1 tsp. cinnamon
3/4 c. butter
1 tsp. salt
 
Mix the strawberries and rhubarb with the sugar, cornstarch and lemon juice. Put in 9x13 pan. For the topping: mix the remaining ingredients and blend. Add topping to 
finish and bake at 350° for 45 min. Top with fresh whipped cream.
