Delicious Meatballs Made with Aldermere Farm Sweet Italian Sausage

The winter months change the way that you prepare and enjoy your beef. Throughout the summer, our Beltie beef can be enjoyed as kabobs, burgers and steaks, which are usually prepared on the grill. When the temps drop to the single digits and we seek refuge from the cold, there is no better way to rejuvenate than with a warm bowl of beef stew or chili, maybe a crockpot roast or even Sweet Italian Meatballs. We currently have plenty of Beltie ground beef with Sweet Italian Sausage seasoning and this is perfect for meatballs among other recipes. This recipe is a perfect match for our delicious, lean beef and is simple to make. You might want to make extra and freeze them to use at a later time.  Italian Sausage Meatballs

2 eggs

1 cup dry bread crumbs

1/4 cup finely chopped onion

2 pounds lean Italian sausage

 

In a large bowl, beat eggs.  Add all remaining ingredients.  Mix well with hands.  Shape into 1-inch balls.  Place meatballs in single layers on ungreased cookie sheets.

Bake at 400 degrees for 10-15 minutes, until cooked throughout. Remove meatballs from sheets and drain, if necessary.  (If lean, grass-fed beef is used, there will be no need to drain grease from the meatballs.)  Cool meatballs.  Freeze, or use in recipes. Each pound of meat makes about 25-36 meatballs, depending on size.
